Recipe: Clean Meatloaf

I made this delish, family approved meatloaf for dinner on Tuesday night. Then made it for lunch on the boat the next day by making meatloaf sandwiches/wraps. This morning I put some in our egg scrambles. And it's been delish every time. There is STILL some leftover, but no worries this freezes well!


 
I got this recipe from He and She Eat Clean who got it from Jamie Eason. So...this is
 
Jamie Eason's Monster Meatloaf!
 
Ingredients:
1 1/2 cup chopped onion and red peppers (total)
1tsp salt
1tsp pepper
1/2 tsp dried thyme
1 tsp minced garlic
1/4 cup liquid aminos (or low sodium soy sauce)
3/4 cup low sodium chicken broth
2 tsp tomato paste (no salt added)
3lbs extra lean ground turkey
1 cup quick cooking oats
4 egg whites
1 cup reduced sugar ketchup
 
Directions:
1. Preheat oven to 350 and spray 9x13 dish with non stick spray
2. In large sauté pan, cook the onions and peppers with salt and pepper and thyme until onions are translucent (about 5 minutes)
3. Add garlic, soy sauce (or liquid aminos), chicken broth, and tomato paste, mixing until heated through.
4. Set mixture aside to cool.
5. In large bowl combine ground turkey, egg whites, oats and sautéed mixture.
6. Mix by hand until all incorporated and press flat into 9x13 pan.
7. Spread ketchup in an even layer on top *I used half cup of ketchup and mixed it with the leftover tomato paste*
8. Place in oven for 1 hour and 20 minutes
