T25 Eggs

I love breakfast.
I love oatmeal for breakfast.
But I love eggs more.
I love eggs for lunch.
I love eggs as a snack.
I love eggs for dinner.
 
OK now I'm sounding like Dr. Seuss, but you get the point!
So I was thrilled when I opened my Focus T25 program and found that Shaun T came up with an awesome nutritional guide! Each recipe has only 5 ingredients and takes hardly any time to prep! They are ingredients you've most likely heard of! Annnnd there a a few egg scramble recipes. Sold.
 
 
It seriously only took me about 10 minutes IF that to make my meal plans the last two weeks. And I solely used this guide.

Today I'm sharing with you the
"Tomatillo & Avocado Scramble".
This one is so easy you are going to laugh, I can already hear "that's it??"
It's basically fresh salsa and avocado on top of scrambled eggs.
BOOM.
 
Ingredients:
-1 large egg
-6 large egg whites (3/4 cup)
-Ground black pepper (optional)
-1/2 tsp. EVOO (or non stick cooking spray)
-3 Tbsp. tomatillo salsa
-1/4 medium avocado, sliced
 
To make it incredibly even easier, I buy a carton of egg whites, and I buy the fresh salsa from the produce section (it has hardly any liquid). My local Weis and Giant has it .
 
 
 
Instructions:
-Combine egg and egg whites in medium bowl. Season with pepper (if desired- I'm not a pepper girl but like it in this scramble); whisk to blend.
-Heat oil in medium skillet over medium-low heat.
-Add egg mixture; cook, stirring occasionally, for 3 to 4 minutes, or until eggs are set.
-Top eggs with salsa and avocado.
 
ENJOY!
This is so good, and I've had it for breakfast a few times and even for dinner twice.

Choose your Challenge!

Helllerrrrr!!!! Happy Tuesday. So I've had all intentions on giving you my 1 week update on Focus T25...but I'm just not the best blogger anymore! Womp womp womp. This summer is going SO quick and we have been to Frontier Town in MD, lake on the weekends and just the usual busy summer stuff!


 
 
Can you believe that its the end of July already?!? What I am here chit chat about are TWO challenge groups I have starting AUGUST 5th! Are you just sooo excited to read about them?!
 
 
First I want you to ask yourself some questions.
 
1. Did you wear the clothes that you wanted to wear this summer?
2. Do you feel confident in your bathing suit?
3. When you look in the mirror what do you see?
4. Do you struggle with emotional eating, social gatherings, vacation and balancing that with healthy eating?
5. Are you busy and lack the time to workout but really want to make a lifestyle change?
6. Do you need someone to keep tabs on you to make sure you are following the right plan?
7. Do you have good intentions with healthy eating but you are constantly frustrated by your lack of progress?

 
 
If so I would really consider joining one of my challenge groups! So lets choose your challenge!
 
If you already have a fitness routine that you love or take classes at the gym ... or you really just have no idea where to start but know that you WANT to ....the 30 day Clean Eating & Shakeology challenge group would be your choice! I run these challenge groups not so you can lose a few pounds, start an exercise program for a little bit and fall of the wagon. I want you to create a new lifestyle! I want you to learn how to eat right, make time for exercise and make it manageable for life!
 
 
With me as your Coach you will join a private Facebook group with 5 people like you who have the same goals of leading a healthier life through eating healthier and working out! You will receive support from me and the other members of the group. You will hold each other accountable and push each other. A little friendly competition never hurt either ;)
I will help you stay motivated, post daily in the group, help you with nutrition and help you reach your goals! I will support you every step of the way, no matter where you're starting in your journey.
 
For this challenge you will be using Shakeology and a Beachbody program like P90X, Insanity, and Turbo Fire, Focus T25 etc (There are so many to choose from). Shakeology is required because I know it works. Like I said, I started drinking it half way through Insanity and it was a total game changer for me. I lost weight, I have more energy and I just feel GOOD. You will use Shakeology as a meal replacement, eat a healthy diet and workout.

During this 60 day challenge I will first have you set your goals and tell the group a little bit about yourself. I will ask you to post daily and rate your days. I throw out assignments here and there too. You can post questions, comments and motivation as you please! This is your group. Chances are something you're wondering someone else is too. Or someone else may need that extra motivation you post that day! As much as I'm supporting and pushing you, you're supporting and pushing each other. I will have you take measurements and photos in the beginning, at day 30 day and day 60. It's important to be active in the group so that I now you're on track and so that everyone benefits from everyones input.

Focus T25 & Quinoa Patties

I'm not gonna lie that title seems a little ridiculous. Lemme explain. Focus T25 is the new workout I'm doing. It's 25 minutes a day, 5 days a week. Perf. for me since I'm not a fan of working out on the weekend. Today was DAY 1 and... I SURVIVED! You can do anything for 25 minutes..unless its day 1 and you need to take a few breaks and or follow the modifier a few times and or change a poopy diaper mid way through (I may of been thankful for the break).
 
 
 
Today was CARDIO and I busted my butt! Shaun T's 25 minutes is no joke. Each exercise was a progression. At first it was cake and then the next step was a little harder then full on crazy pants. There is also a session called "burn out" where you do a mix of the exercises as fast and hard as you can. It reminded me of the fire drills in Turbo Fire!
 
 
 
I also really really realized how I need to make an effort to wake up when my alarm goes off and workout in the morning and get my shower in. Have I talked about how I need to do this and how much happier I am when I actually do this. YUP. So... Sarah... just do it already!
 
 
I used the Focus T25 nutrition guide to create my meal plan this week. I really like this nutrition plan. It's simple and Shaun T is real. Most Beachbody programs come with one and I've used them in the past as a reference. With the T25 one there are only 5 ingredients for each recipe and there are usually ingredients I've actually heard of. Except for the "temeh" that I had to Google. And by my surprise my Weis actually carried.
 
 
So tonight on my meal plan for dinner was the "Quinoa Patties & Spinach". I like anything in "patty" form, I'm not sure why. Maybe its the crispy-ness. Anyway these are CLEAN and DELISH. WIN WIN. So here you go! Add these to your list for dinner ideas!
 
 
 
(makes 1 serving)
-3/4 cup cooked quinoa
-1/2 med. red bell pepper, finely chopped
-4 tsp. flax seed
-Sea salt and black ground pepper (to taste)
-1 large egg
-Nonstick cooking spray
-3 cups fresh baby spinach
 
 
 
-Combine cooked quinoa, bell pepper, flaxseed, salt, pepper, and egg in a medium bowl; mix well. Form into two balls; yes this makes me laugh. So mature.... (here is where I forgo the instructions and put them in the pan because A.the instructions are kind of confusing and B.it didn't work anyway). Press ball into a patty.
 
-Head medium skillet lightly coated with nonstick cooking spray over medium heat.
 
-Cook patties for 2 minutes on each side, or until cooked through and light golden. Remove from skillet. Keep warm.
 
-Add spinach to skillet; cook, stirring frequently, for 2 to 3 minutes., or until wilted.
 
-Place spinach on serving plate and top with patties (I should've had more spinach!)
 
They look prettier in the book but still tasted great!

PS: don't be scared of carbs- these are the GOOD kind.
